What’s For Dinner?

Aside from my crazy baking attempts, I really do love to cook. I come from a long line of stellar chefs: my grandfather was a chef,  my cousin is a chef, my nanny(my gramma), dad and mom are all amazing cooks. I watched my parents and nanny cook my entire life and I must say their passion was passed on.

Every night dinner is on the table when my husband comes home from work. It’s been like that since we moved in together 2 years ago. When I was working full time, I always looked for recipes online that would be quick and easy to make so we weren’t chowing down at 8:30 p.m. This is one of my favorite recipes – Broccoli Cheese Soup. It tastes just like Panera’s, I swear – and its super easy to make.

Broccoli Cheese Soup

Yum.

Ingredients:

  • 3 cups Milk
  • 1 tablespoon Butter
  • 2 cups Shredded Cheddar Cheese
  • 1 can Cream of Mushroom soup
  • Broccoli (fresh florets or frozen), roughly chopped
  • 1-2 Carrots, diced
  • 1/2 Onion, diced

– Sautee the onions in about a tablespoon of butter. Once the onions are translucent, add the Cream of Mushroom soup and shredded cheddar cheese. Mix on low heat until everything is melted.

– While everything is melting together, steam the broccoli & carrots.

– After the cheese has melted, whisk in 3 cups of milk. Then add the vegetables. Stir together and simmer on low heat.

Simple and easy, right? This should take you no longer than 20 minutes to whip up. I’ve been planning on making this for a couple weeks now and thought about buying some delicious crusty bread and serving it in a bread bowl. Eff Panera!!
