The Absolute Best, Lick-Your-Bowl-Clean Chili

For Christmas, Santa brought me a slow cooker. WHY AM I JUST GETTING ONE NOW?!!?!?!??!?! I seriously am the last person on earth to get this memo. And I can’t understand why no one has told me sooner about the splendor that is El Crock Pot. It is probably the greatest appliance of all time-and I love my appliances. I can honestly say its better than the KitchenAid, immersion blender and food processor combined. Who ever invented this magical machine should have a golden statue erect of themselves so crazy bitches like myself can praise it every day. It has made my life so much easier and makes the most delicious meals EVER! I mean, you throw all the shit in, press a button and BOOM! 4-8 hours later you got a meal. It truly is nice to have everything done by the time my husband gets home from work so I can actually enjoy some time with him instead of being chained to the kitchen, doing dishes and slaving over a hot stove. So, the moral of the story here folks, drop what ever you are doing right now and go get a goddamn crock pot! It is life changing. And you know what else is life changing – this chili recipe.

Warning: You will want to lick your bowl clean and most likely you will. My husband literally licked his bowl clean – something he has never EVER done in my presence or with my cooking. So I can only think that my cooking has been sub par til now. Anyways, here’s the damn recipe.

What you’ll need:

  • 1 lb ground Turkey or Beef (I use ground turkey breast, it amazzze)
  • 1 onion, diced
  • 1 small green pepper, diced
  • Packet of Chili seasoning
  • 1 8 oz can of tomato sauce (I used Hunts)
  • 1 can Rotel tomatoes
  • 1 can red kidney beans
  • 1 can pinto beans
  • 1 can black beans
  • 1 small can of corn (I just eye balled and threw in just enough for some sweet crunch)

Optional Toppings:

  • Cilantro (for garnish, but adds a really amazing flavor)
  • Shredded cheddar cheese
  • Sour cream
  • Salsa
  • Tostitos Hint of Lime chips for dipping

Here’s what you gotta do:

Coat a small pan with 1/2 tbs of olive oil and sautee the onions and green peppers. Get those nice and soft, then put in a medium size bowl. Next, take a medium sized pan and brown the meat. You’ll have to drain the excess liquid, so once you are done you can go ahead and throw the meat into the bowl with the onions and peppers. Give them a good mix and add that to the crock pot.

Open up your cans of beans, drain and rinse with some water. Do the same to the corn then add to the crock pot. Next, add the chili packet, Rotel tomatoes and the tomato sauce and give that mother a nice turn to get everything mixed together.

Set crock pot to 6 hours and let’er rip!

You NEEEEEED to top with cilantro, it really adds an awesome flavor to the chili. Throw on any other crap you want – cheese, sour cream, salsa – what ever. It will only make the chili THAT much more delicious.
