Leftover Chicken Chop-Chop

I always try to mix things up when I have leftover roasted chicken in the fridge. Back when I was in college I worked at a place called Ciccio & Tony’s (the best place ever – wish it wasn’t only in Tampa!!) where they added “Chop-chop’s” to the menu. They are pretty much like what Chicken Kitchen or Offerdahl’s offer, but a million times better. So I started making my own versions of these chop-chops with any leftovers I have.

All you need is some rice (I prefer yellow but white, brown, jasmine work), salad, some type of dressing and chicken. Then you can start getting creative. You can pretty much add just about anything to it to make it yummy. I like to keep mine loaded with fresh ingredients. Peppers, cucumbers, romaine lettuce, tomatoes atop nice warm, yellow rice. I know what you are thinking warm rice/cold salad?!!? I don’t know what it is but that combo is awesome! Then just take any left over chicken you have – whether it be grilled, rotisserie style or roasted – chop it up and throw it in. Finally top with any dressing you like. I have yet to make the curry honey mustard that Chicken Kitchen, Offerdahl’s and Ciccio & Tony’s uses, so I use either Good Seasons dressing with balsamic or I make my own lemon vinaigrette. Its such a tasty meal and fills you up. But I could eat about 3 servings of them it at one time.

It is extremely easy and great to make if you are in a rush or really don’t feel like cooking. Pair it with a nice glass or 2 of wine :-) that’s what I usually do!

I would literally eat this for lunch and dinner every.single.day if I could. Now on to master the infamous curry honey mustard dressing for the next time…..
