Easy Strawberry Rhubarb Pie

Looking for an easy dessert that will make you like Betty-effing-Crocker? Then you must make this pie..immediately.

Don’t let the name “rhubarb” scare you. It scared the shit out of me when I first tried it about 3 years ago. My sister had a family dinner party and made this. I thought rhubarb was like a parsnip or something weird like that and was thinking why the hell would you make a pie out of THAT! Turned out it was the most delicious thing I’ve ever had, a perfect combination of sweet and tart.

Now that I am a Stay-At-Home-Mom, I have embraced my role as kitchen bitch with open arms. I really enjoy cooking and making homey, enjoyable things for my husband (and myself). I noticed on Pinterest, my 2nd BFF, that rhubarb was in season and I thought back to that dinner party and how its been ages since I had it. I figured it wouldn’t be that hard to make…and it was far from hard. 6 simple ingredients and 40 minutes later my husband and I were in a strawberry rhubarb pie coma. This was the first pie I’ve made that wasn’t chocolate pudding, so I definitely gave myself a pat on the back. Although there was one tiny mishap-I forgot to put a pan under the pie as it was cooking and almost smoked my husband and his friends out of the house when the pie oozed out and dripped all over my extremely hot oven. Cleaning it was really amazing. Best part of my week.

If you are having a dinner party, bbq or just want to show people that you can bake better than them, you definitely need to try this strawberry rhubarb pie recipe!

Strawberry Rhubarb Pie

  • 3 cups Strawberries, sliced
  • 3 cups Rhubarb, sliced
  • 2 cups Sugar
  • 2/3 cups Flour
  • 1 TBS Butter
  • Pie Crust (homemade or store bought)

Pre-heat oven to 450 degrees.

In a large bowl, mix sugar and flour. Stir in the sliced rhubarb and strawberries. Pour the mixture into a pie crust and cut the butter into pieces and scatter over mixture. Cover with the top pastry, scoring the edges so nothing oozes out. Make slits on the top and cover the scored edges with aluminum foil.

Bake for 40 minutes. Remove the foil then bake for an additional 10 minutes.

Strawberry Rhubarb Pie

Be sure to remember to place the pie on a pan or one under neath it so in case it oozes, you don’t have to scrub your oven on your hands and knees at 10 pm! :)

Let the strawberry rhubarb pie cool before eating, but if you can’t wait, its soooo good nice and hot out of the oven!
