The Absolute Best AND Easiest Grilled Chicken Marinade

Now that I have my own little herb garden growing in the back yard, I had to step up my cooking game. My go to meal when I hit a wall is grilled chicken kabobs. It’s easy, its delicious and healthy. My husband has been complaining about the marinades I’ve been using for the chicken. WTF, right? I channeled my anger into making a kick ass marinade to shut him up.

So I decided to try something extremely simple because I had a toddler grabbing at my damn legs the other night (and every night I’m cooking for that matter). I grabbed these 5 simple ingredients: lemon, olive oil, salt, pepper and cilantro. Chopped up my chicken, threw all them together and let it sit in the fridge soaking in all the good stuff for at least 2 hours. They hit the grill it for about 6 minutes on each side or to the internal temperature of 165 degrees. And that’s it.

Adding some chopped, fresh veggies like mushroom, bell peppers, red onion and cherry tomatoes really bulk this dish up. Just toss all together with a generous amount of olive oil, salt & pepper. Don’t be shy with any of these 3 – heavy hands its quite alright! Grill them along with the chicken.

The verdict??? Success!

Not only did I not burn the crap out of the kabobs, but got multiple compliments on the meal from my husband – genuine ones at that! Whether you cut up the chicken for a kabob or just grill it, its got a tangy, sweet taste and the chicken stays so juicy!

Best Chicken Marinade

  • 1 lemon, juiced
  • 1/4-1 cup of olive oil
  • generous helping of salt & pepper
  • 2 TBS cilantro, chopped

Mix all together and pour over chicken. Marinate for a good 2 hours then grill to perfection!
