Fajita Night!

I am all about the easy, 30 minutes or less recipes for dinner. So when I was flippin’ through the recipe book my mom made me for Christmas, I stopped on a recipe for fajitas. Had minimal ingredients and took less than 30 minutes-score.

Doing tex-mex at home is by far the best, its so fun to make all the fixings yourself. I usually make some guac, salsa, and put out a whole fixin’ bar of cheese, lettuce, tomatoes, sour cream and hot sauce. No way am I gonna skimp when it comes to Fajita Night! What makes doing it at home so much better, is the little personal touches you are able to do….like warming the tortillas on the stove as opposed to just nuking them in the microwave. Adds a nice warm, crispy feel to the soft tortillas!

Chicken Fajitas

  • 3-4 Chicken breasts or 6 Chicken tenders
  • 1 large Onion, sliced
  • 3-4 Bell Peppers, sliced thin (green, red & yellow)
  • 1 TBS Olive Oil

Chicken Marinade:

  • 1/2 Lime
  • 1/3 cup Olive Oil
  • 1 tsp Cumin

In a bowl, mix together the marinade ingredients then add the chicken. I like to marinate my meat in a Food Saver bag so it holds in all the flavors and speeds up the marinade process. If you don’t have a Food Saver, just put it in a Ziploc bag or leave it in the bowl. Cover and place in the fridge until ready to grill.

While the meat is marinating, begin slicing your onion and peppers. In a medium sized pan, add 1 TBS of oil and heat on high. Quickly saute onions and peppers til they begin caramelizing. Season veggies with some cumin, salt and pepper. Set aside.

Grill the chicken till cooked (165 degrees). Let rest for a couple minutes then slice up for easy fajita building! In the mean time, in a small pan, heat over medium heat and begin warming the tortillas. If you don’t have time to do this step, you can always heat them up in the microwave, but remember to wrap them in a damp paper towel just for a few seconds.

Put out whatever fixings you like – shredded cheese, lettuce, hot sauce, guacamole, salsa, corn, beans, sour cream – for example. And enjoy a fun fajita night-in!
