Brunch: Baked Eggs

I love brunch. Brunching is the best. Waffles, eggs, pancakes, hash browns, mimosa’s, bloody Mary’s….Did I mention mimosa’s?? For Christmas we decided to have a brunch and served all the above as well as shrimp cocktail, stuffed mushrooms and baked eggs. It was a first for us to try them out, my husband and I both saw recipes for baked eggs and they looked so good. We decided to put our heads together and whip up some with some great ingredients.

The prep was a bit tedious, depending on what you want in the baked eggs but so worth it! Hey, you can even whip these up for a nice “Breakfast for Dinner” night!

Baked Eggs

Serves 4

  • 8 eggs
  • 1 cup thawed/steamed Spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 6-8 slices Bacon, cooked & broken in pieces
  • 5 Mini Sweet Peppers, diced/chopped
  • 1/4 cup grated Gruyere Cheese
  • Salt & Pepper
  • Butter

Preheat oven to 350 degrees.

In 4 oven safe dishes/bowls, grease with butter. Arrange spinach, bacon, and peppers around the bowl leaving an opening right in the middle for the egg. Sprinkle some Gruyere in the center then crack two eggs in each bowl. Season with salt & pepper and top with grated Parmesan cheese.

Place the bowls on a cookie sheet and place in the oven for 10-12 minutes. Serve immediately!

Make some yummy home fries or a nice arugula salad and some fruit, you have yourself a yummy meal! And don’t forget the Mimosa or Bloody Mary!! :)
