If you are fortunate enough to have an Anthony’s Coal Fired Pizza in your neighborhood, then you know the amazingness that is their coal fired wings. I can just envision the crispy, herby, oniony deliciousness that is packed in each bite as I write this. Mmmmm…
Unless you have the most ridiculous house ever and a chef’s kitchen that enables you to have your own coal fire oven, then you are like the rest of us mere civilians that are lucky enough to just have a regular stove. Lame. So, you may be thinking how can you achieve the coal fired goodness of these wings in the oven? Well, you can’t really get the charred coal fired-ness but you get pretty damn close! I owe this recipe all to my dad, who is quite the culinary genius I might add, as he makes his version of these outrageously delicious wings that are crispy, herby and oniony and baked right in the oven. Affectionately referred to as Nonno’s Wings, we make them at least 5 times a month. They are extremely easy to prepare and make – takes about 1.5 hours from start to finish. Not bad, especially if you are having one of those days where you don’t know what to cook but you want something delicious and filling that doesn’t take too much time. Accompany your wings with a fresh salad of your choice and you have one impressive meal.
Restaurant Remake: Anthony’s Coal Fired Pizza Wings aka Nonno’s Wings
- 1 Bag Frozen Wings
- 2 Stems Fresh Rosemary, roughly chopped
- Olive Oil
- Salt & Pepper
- Parchment paper
Defrost wings in cold water. Pre-heat oven to 375 degrees.
Trim the defrosted wings of excess fat and cartilage. Take some paper towels and pat each wing dry. Reserve in large mixing bowl.
Drizzle about 2 tablespoons (one at a time) of olive oil on to the chicken to coat them. You may need to add a bit more depending on the size of the wings. Add fresh chopped rosemary, salt and pepper and toss the wings around to get everything coated with the spices.
Line a large baking pan with a sheet of parchment paper. If you don’t have parchment paper, simply spray with cooking spray or lightly coat with some more olive oil. Place wings in rows on the baking sheet and top off with a little more salt and pepper. Place in the oven for 30 minutes, turn wings, then cook for an additional 30 minutes or until the wings are crispy golden.
Look how crispy those bad boys look! These taste just like Anthony’s Coal Fired Pizza wings! You can even sautee or roast some onion slices to add the real Anthony’s flair to it, but with or without the onions, these wings are divine!
