I am all about the easy dinners so anything I can make in 30 minutes or less is a win for me. About a year ago, I was going out one night and decided to be a nice, little wifey and cook my husband dinner before I went out. I know, I know, ‘Wife of the Year’. I found chicken sausage with apples and cooked them up with some apples and onions. I was getting texts all night from him saying how great it was and he still talks about it a year later. So, after many months of begging, I finally found some chicken sausage (from Trader Joe’s, my new favorite store) and decided to make them for him last night. Only thing is, I totally forgot what I did. Typical Amanda. My memory is shot and the chances of this meal being a huge FAIL was pretty high, but it actually turned freaking fantastic.
Chicken Sausage with Apples & Onions
- 1 pack Chicken Sausage (usually 4-6)
- 1 Golden Delicious Apple, sliced thin
- 1 Fuji Apple, sliced thin
- 1 small Onion, sliced thin
- 1 TBS Olive Oil
- 2 TBS Butter
- 1/4 teaspoon Cinnamon
- Dash of Nutmeg
- 2-4 TBS Chicken Stock
- Fresh Sage for garnish
In a large saute pan, heat olive oil over medium heat. Once the oil is wavy, drop the sausage links in and brown on all sides. That should take about 5-7 minutes. Remove from pan.
While the sausage is cooking, slice apples and onions and add them to the oil. Saute for about 3 minutes and add butter, cinnamon, and nutmeg. Stir until butter is melted and everything is coated in the seasonings. Cook for an additional 3 minutes.
Add about 2-4 tablespoons of chicken stock to the apple mixture, place the sausage back in, cover and cook for about 10 minutes. The liquid should reduce. Garnish with fresh sage and serve!
We didn’t need any other side with this meal, but you could accompany it with some rice or a salad. It was so good and SO easy! A no-brainer meal for sure and from fridge to table in under 30 minutes.
