Healthy Chicken Salad Recipe

 

There was a time when I ate chicken salad almost every day. Sure, I may have been pregnant and it was one of the only sandwiches I could eat but that stuff was my jam. Even though I was lazy and pregnant and ordered it from deli’s or Publix most of the time, there were a few instances that I actually made my own. When I did, I tried to make this healthy chicken salad recipe as opposed to the mayo-packed crap I’d get.

Needless to say, 10 months of chicken salad pretty much made me take a long break from it and I recently had a craving for some (NO, I am not pregnant!) since I had a bunch of roasted chicken left over. Enter my new favorite lunch: Healthy Chicken Salad Lettuce Wraps.

These are so damn good, I could literally eat 20 of them. By subbing Greek yogurt for the mayo, you definitely save on the calories and it gives a yummy tang to it.

Healthy Chicken Salad Recipe

  • 1-2 Cups Cooked Chicken, cubed
  • 1/4 cup Plain Greek Yogurt
  • Grapes
  • Apples
  • Craisins
  • Almonds Slivers
  • Parsley

Cube up some of your pre-cooked chicken (from the grill, a rotisserie or roasted chicken – whatever you got! Even canned works) and place in mixing bowl. Chop up grapes and apples, as many or as little as you like and add to chicken. Roughly chop parsley and the almond slivers and add htem to the mix.

Take the 1/4 cup of plain, Greek yogurt and add it to the bowl. Mix until everything is incorporated then toss in a handful of crasins. Mix again then you are ready to plate.

You can use your favorite bread, wrap or roll but I like to use romaine lettuce as my bread. Just load up a leaf with the goods and you’re done. Low carb, crunchy and refreshing lettuce boats! Taking a break from mayo-based salads is always a good thing, I even tried it with tuna!
