If you would have told me I’d be making a dish containing Zoodles (zucchini noodles=zoodles) a year ago, I most likely would have laughed in your face! This was one of the veggies I didn’t care for much, but it has been growing on me. So much so that I actually made zoodles! If you don’t have a spirilizer, it could be quite the feat making this. I took my mandoline out from storage (the one I so needed on my wedding registry), dusted that guy off after 5 years and then had to watch a freakin’ YouTube video on how to use it!
I have been scheming up a recipe for a couple months now and finally got the balls to try it out. My mother-in-law makes a similar dish which inspired me. She slices the zucchinis and it is kind of like a zucchini lasagna that tastes like pizza. I know you might think I’m nuts describing zucchini tasting like pizza but it really does! These baked zoodles are my healthy take on baked ziti. I made this 21 Day Fix approved by using just 1 purple container of sauce, 4 green containers of zoodles, and 2 blue containers of cheese. So basically 1 serving is 1/4 purple, 1 green, 1/2 blue! I ate this up like I was going to the electric chair.
- 2 Large Zucchinis, Julienned, spiralized or chopped
- 1 1/4 cup Tomato Sauce
- 2/3 cup Shredded Mozzarella
- 1/2 TBS Italian Seasoning
Use a mandoline to julienne the zucchinis. If you do not have one, use a spiralizer or simply chop the zucchini into bite-sized pieces.
In a mixing bowl, add zucchini, tomato sauce, Italian seasoning and 1/3 cup shredded cheese. Mix well and place in an oven safe dish. Sprinkle remaining 1/3 cup of cheese atop the mixture and bake for 25 minutes.
Serve immediately! This is a nice intro for the family if you are just getting into the healthy eating game. It’s filling and freakin’ delicious!
