Healthy Burrito Bowl

With Cinco de Mayo upon us, I had to represent with something yummy and 21 Day Fix approved. Don’t roll your eyes! You will be surprised how much food you will get with this Healthy Burrito Bowl and it won’t feel like you need to rolled out of you kitchen after eating it.

You might be thinking I am completely insane to sit here and give you a Mexican-inspired recipe and not give you the chips, tortillas and sour cream. Believe me, as much as I love me some delicious carbs, I can promise that you will not even miss them! By simply swapping out some of the more calorie-heavy ingredients with a healthy alternative, it will make such a huge difference and you won’t see it on your hips.

Burrito Bowl Recipe

Healthy Burrito Bowl

makes 2 servings

  • 1 1/2 cup Chicken (chopped or shredded)
  • 1/2 cup Brown Rice, cooked
  • 1/2 cup Black Beans
  • 1 cup Shredded Romaine Lettuce
  • 1/2 cup Mini Sweet Peppers, diced
  • 1/2 cup Grape Tomatoes, quartered
  • 1/3 cup Shredded Cheese
  • 1/3 cup Avocado, diced
  • 2 tablespoons Plain Greek Yogurt
  • Fresh Cilantro, chopped
  • Hot Sauce

Take your two bowls and fill with brown rice, chicken and black beans. If they aren’t already warm or hot, heat these ingredients up. Once heated, top with shredded cheese, lettuce, peppers, tomatoes and avocado.

Toss a dollop of Greek Yogurt, some fresh cilantro and a few dashes of hot sauce if you like, mix everything together and enjoy!

This makes for a very filling lunch or dinner! For all you 21 Day Fix-er’s this is totally approved: 1 Green, 1 Red, 1 Blue and 1 Yellow.
