I am all for my husband cooking. In fact, I encourage it. 9 out of 10 times he comes up with some outrageously delicious dishes that knocks my socks off. And there is always one that scares the ever living crap out of me to the point of no return. Well, no fear my friends, this recipe is NOT one of those! When we had guests over a couple weeks ago and he whipped up this little concoction: Caprese Bruschetta Dip.

We devoured it! The fresh mozzarella, basil and cherry tomatoes were full of flavor and the tang of the balsamic vinegar took this dish to the next level. Best part about it, you can dip, spoon or simply inhale this Caprese Bruschetta Dip! I could have sat there and ate from the bowl, it was that delish.

Caprese Bruschetta Dip

  • 1 package Cherry Tomatoes
  • 1 container small Fresh Mozzarella balls
  • Handful of Fresh Basil, chiffonade
  • 3 TBS Olive Oil
  • 4 TBS Balsamic Glaze
  • Salt & Pepper

Clean cherry tomatoes and cut them in quarters. Do the same with the fresh mozzrella balls. Reserve in a bowl.

Clean a hefty handful of basil, I suggest 8-10 leaves & chiffonade them (or just stack, roll and slice into thin strips – yes, I think I’m fancy using the word chiffonade :) ). Add to bowl.

Add balsamic glaze and olive oil along with salt and pepper. Stir it up good so every tomato and piece of cheese is covered in that balsamic goodness.

Serve with some wine, fresh Italian bread, crackers or simply eat it out the bowl! It is an easy crowd pleaser.
