Back to school means back to routines and let me tell you, this mama could not be more excited about that! Following a schedule is one of those things I got used to after becoming a mom and I again find myself saying “Who am I?!”
With the kids schedules getting back on track, both my husband and I can get our own where we want it. That means, meal planning & exercising. I have been trying out a bunch of new recipes this summer to add to the mix and thought of this bad boy after eating like shit for almost 2 weeks. I needed some lean meats, veggies and clean ingredients. Enter the Stuffed Turkey Cutlet.
OH my stuffed turkey this was good! Crunch and full of flavor busting at the seams you will feel full and not guilty! 1 Stuffed Turkey Cutlet is just covers 1 1/2 Red, 1/4 Green, 1/2 Blue, 1/4 Yellow. Pair with a veggie-packed salad and some quinoa or brown rice and you have a complete meal hitting without going over your containers.
Stuffed Turkey Cutlet
- 4 Turkey Cutlets, thin sliced & pounded thin
- 1 Bag Baby Spinach, cooked & chopped
- Shredded Mozzarella
- Whole Wheat Bread Crumbs
- 1 Plain Greek Yogurt, single serve container
- Himalayan Pink Salt & Pepper
- 1 egg
- 12 tooth picks, soaked in water
Preheat oven to 375 degrees.
Take a long sheet of saran wrap and lay on top of a cutting board. Lay one piece of turkey cutlet down on half of the saran wrap and cover with the other half of the wrap. With a meat mallot or the back of a mixing cup – whatever works right?! – pound the cutlet thin.
In a small mixing bowl, combine Greek yogurt, salt, pepper, shredded mozzarella and cooked spinach. Make sure everything is mixed together nice.
Take pounded cutlets and add 1/4 cup of the spinach mixture in the middle of each cutlet. Gently wrap one side of the turkey cutlet over, tucking under the mixture and securing with damp toothpicks. I use about 3-4 in each roll-up.
In a bowl, lightly beat one egg and coat each roll up in the egg wash. Then roll in whole wheat bread crumbs. Make sure the entire cutlet is breaded. Place on a greased baking sheet.
Cook for 30 minutes or until turkey is completely cooked through.
No joke, the husband and I could have eaten all 4 but we controlled ourselves. I have added this to my arsenal of delicious 21 Day Fix approved dinner recipes! If you don’t have turkey, chicken cutlets will work just as well.
