Parmesan Herb Potato Crisps

Do you get bored with food sometimes or am I the only one? When I get into a culinary groove, I tend to not veer from it but there comes a time when I start getting bored and want to push the boundaries of my trusty-reliable recipes.  And let’s face it, sometimes plain old roasted potatoes can be so damn boring. Not anymore my friends! By simply changing the shape of a food can make all the difference in the world and take a boring classic to a whole ‘nother level!

These Parmesan Herb Potato Crisps have become my new favorite side dish. Say bye-bye to those big chunks and slice your favorite potatoes thin. Not only are they fun to eat (homemade potato “chips” anyone?!) but the flavors are pumped up more than you would even think! If you have a steady hand, slicing them yourself works great or if you are a kitchen gadget lover, whip out your mandolin. They are crispy, herby, cheesy and just enough potato-y.

Parmesan Herb Potato Crisps

  • 3-4 Potatoes (Idaho, Red or Yukon work, even sweet will do!)
  • 3 TBS Fresh Rosemary, roughly chopped
  • 1 TBS Fresh Parsley, chopped
  • 2 TBS Olive Oil
  • Himalayan Pink Salt & Pepper
  • Parmesan Cheese

Preheat oven to 375 degrees

Clean potatoes. Slice potatoes into 1/2 inch pieces. Place sliced potatoes in a large bowl with cold water. Let soak for about 10-15 minutes.

Drain water and pat potato slices dry. Toss with olive oil, making sure to coat all the slices well. Add herbs, salt and pepper.

Line baking sheets with parchment paper (if you don’t have any, the oil from the potatoes should grease the pan enough!) and place slices individually. You may need to bake them in batches if you don’t have enough baking pans.

Bake for 30 minutes, flipping each slice halfway through. Once they are done cooking, top with parmesan cheese and place back in the oven for another 5 minutes.

Serve immediately!

We are definitely not bored anymore with our potatoes, that’s for sure! These pair up with pretty much anything you’d like – chicken, fish, steak, pizza, burgers…..I’d even eat these crisps with some eggs! Wonder what shape I can do next…hmmmm…
