Breakfast Egg Muffins ~ 21 Day Fix Approved

I don’t know about you, but I am THAT mom who is always late. I have always been that way, and believe me, I try my hardest to get to places on time. It also happens to be my husbands biggest pet peeve. It is one of the few things we get into a fight about. So come the mornings, I am typically running around like a chicken with it’s head chopped off trying to get the kids dressed, fed, hair and teeth brushed, lunches packed and then getting myself ready. I feel like I run a freaking marathon by the time I drop my daughter off at school, after profusely apologizing to the teacher for being late….AGAIN.

To help with the utter craziness that the morning brings, I like to have quick and filling breakfasts ready so I can just grab and go. Back when I was doing 21 Day Fix, these Breakfast Egg Muffins were my go-to in the mornings. They fueled my workouts and gave me energy to last to my mid morning snack.

The best part about these Breakfast Egg Muffins is that you can tailor them to your liking. Toss in your favorite veggies and cheese and viola – breakfast is served. Having them baked in muffin tins makes it easier to just grab and go when you are the no-headed-running-late-chicken, like myself.

Breakfast Egg Muffins

Breakfast Egg Muffins

  • 6-8 Eggs (use 8 if you have small eggs) = 3 Red Containers (for 21 Day Fixers)
  • 3 cups Veggies of your choice: Spinach, Tomatoes, Mushrooms, Peppers, Onions = 3 Green Containers
  • Shredded Cheese = 1 Blue Container (optional)
  • Coconut Oil Spray
  • Muffin Tin(s)
  • Himalayan Pink Salt & Pepper to taste

Step 1: Preheat Oven to 350 degrees.

Step 2: Spray muffin tin with coconut oil spray.

Step 3: Chop veggies of your choice and fill 3 green containers (or 3 cups). You can use frozen veggies if you prefer.

Step 4: In a mixing bowl, beat eggs with some pepper and Himalayan Pink Salt. Add veggies of your choice and give it a good mix.

Step 5: Fill muffin tin with prepared egg/veggie mixture and place in the oven. Bake for 20 minutes.

Top with cheese as soon as you take them out of the oven. Or if you are eating them throughout the week for a quick morning breakfast, top with some cheese and pop them in the microwave for 30 seconds.

4 muffins = 1 Red, 1 Green containers for the 21 Day Fix!
