Brunch: Baked Eggs

Brunch: Baked Eggs

I love brunch. Brunching is the best. Waffles, eggs, pancakes, hash browns, mimosa’s, bloody Mary’s….Did I mention mimosa’s?? For Christmas we decided to have a brunch and served all the above as well as shrimp cocktail, stuffed mushrooms and baked eggs. It was a first for us to try them out, my husband and I both saw recipes for baked eggs and they looked so good. We decided to put our heads together and whip up some with some great ingredients. The prep was a bit tedious, depending on what you want in the baked eggs but so worth it!…

Disney Dining: Where To Eat, Part 1

1

On our recent trip to Disney, we had all intention of doing it the economical way: packing breakfast, lunch, snacks and drinks and bringing them to park. Lets face it, it can get pricey with a big group when it comes to dining at Disney World. Well, we accomplished a portion of that goal! We brought breakfast foods to eat in the hotel before we left for the day, packed our backpacks and bags with snacks and lunch for the kids. We had all intention of going back to the hotel and eating sandwiches there while the kids napped but…

Non-Maternity Fashion Find: The Comfiest PJ Pants EVER!

0

I am all about the non-maternity clothes while pregnant. I know that might sound like I’m in denial or something but I like to spend money consciously, especially when it comes to clothes. I like to get the most out of what I buy, and maternity clothing – while extremely comfortable – I only tend to wear approximately 4-5 months out of months out of my pregnancy and that’s it. And they are SOO expensive. Thumbs down! Well, around Christmas time, I found some of the most amazingly comfortable PJ pants at Forever 21. Best part about them, only $12.80….

Meatless Friday’s: Veggie Quinoa Bake

0

It’s no secret I’m into experimenting with quinoa. A few weeks ago I had my veggie drawer filled with some produce that was nearing the end of its days and about a 1 cup of cooked quinoa in my fridge that I forgot about on the stove and it became extra mushy. I didn’t have the heart to throw it out. I thought about making quinoa balls, or my usually quiona ‘mac & cheese’ but then I remembered the veggies and thought about utilizing those bad boys. Enter the Veggie Quinoa Bake. Cheese-y, veggie-y, and oh so good! My husband…

Tales of the Cursing Toddler

0

For anyone who has been in my company can attest to the fact that I have quite the sailor mouth. Might not be the classiest thing about me, but it just comes out way too naturally. Everyone keeps telling me I have to cool it with the curses because I have a toddler who is quickly turning into a parrot. I just yeah’d them to death and continued on my way. So yesterday when my toddler dropped one of her toys and yelled out, “Oh, F#$%!” is when I took everyone’s statement a little more seriously. Not only did she…

Mickey Mouse Trauma: Our Experience with Character Dining

0

So this past weekend the family took a trip to the happiest place on earth – Disney World. We thought it would be the perfect place to celebrate our 2 year old’s birthday. I mean, what kid wouldn’t want to spend the weekend of their birthday there?! We are fortunate enough to only live 3 hours south of Orlando so making a last minute trip there isn’t too difficult. So we figured this would be a great way for her to enjoy time with her BFF cousin for her special birthday, considering she is beyond obsessed with Mickey Mouse. Everything…

Turkey Cutlet Club Sandwich

0

Now that I can eat meat on Friday’s again, I have been dying for a turkey club. Unfortunately, being pregnant limits me to some food I used to eat on the reg like sushi and turkey meat. So if I want a turkey sandwich, its got to be fresh, off the bird kind of turkey meat. Bleh. So instead of roasting up a whole bird for this sandwich, I hit up good old Publix and found some turkey cutlets. My wheels started spinning and knew I could pull of the sandwich of my dreams with them.  And you can bet…

Preggatinis! Mocktails Made Easy + Recipe

0

My awesome friend sent me a little preggo package when we announced we were having another baby. When I opened the box there were a giant container of chocolate covered pretzels (sweet & salty-can’t beat that!) and a book, Preggatinis: Mixology for the Mom-to-Be by Natlie Bovis-Nelson. For everyone who knows me knows that giving up my wonderful friends vodka and vino for 10 months is the hardest. The only consecutive months I have had of sobriety have been while pregnant! So I was beyond thrilled to see this book full of yummy non-alcholic “mocktails”. Pregnant ladies shouldn’t feel left…
