Meatless Friday’s: Easy Lo Mein

1

I have been having a hankering for some homemade Chinese food. As easy as it is to pick up the phone and just order it, I felt adventurous and decided to test out my wok skills in the kitchen. I don’t know if any of you out there have ever made homemade Chinese, but its complete insanity if you don’t know what you’re doing! The last time I attempted homemade Chinese, my husband and I were just dating, you know, in that cutesy, lovey-dovey stage and decided to make my mom a whole spread for her birthday dinner. Wontons, lo…

Fajita Night!

0

I am all about the easy, 30 minutes or less recipes for dinner. So when I was flippin’ through the recipe book my mom made me for Christmas, I stopped on a recipe for fajitas. Had minimal ingredients and took less than 30 minutes-score. Doing tex-mex at home is by far the best, its so fun to make all the fixings yourself. I usually make some guac, salsa, and put out a whole fixin’ bar of cheese, lettuce, tomatoes, sour cream and hot sauce. No way am I gonna skimp when it comes to Fajita Night! What makes doing it…

Caprese Bruschetta Chicken

Caprese Bruschetta Chicken

Looking for an easy, healthy and fresh meal to change up your dinner routine? You must try this! In our house we love everything Italian and for some reason I have been in the mood for caprese salad (fresh mozzarella, basil and tomatoes). I got the brilliant idea to fuse together 2 of my favorite apps – Caprese salad and bruschetta. How bad could it turn out?! Well, I could have eaten thirds and fourths of this meal! The caprese bruschetta was so deliciously fresh and added such a great flavor to the baked chicken cutlet. Best part about the…

Buffalo Chicken Bites

Buffalo Chicken Bites

There are a million and one different recipes you can create with a leftover rotisserie chicken. It’s not only easy to just roast your own but you can also drive to the store for one when you don’t feel like cooking. Bonus to one of these rosters, you can stretch it for 2-3 meals. This week while my husband is out of town on business, I decided to test out a new creation I saw on Pinterest: Buffalo Chicken Bites. I like to experiment when he’s not around, you know, in case of a complete Pinterest fail. (I know you all have…

Italian Style Stuffed Peppers

1

Normally, my stuffed peppers are on the healthier side with turkey meat and quinoa, but every time I make them, he always tells me about ‘the one time in college’ where he made the most delicious Italian-style stuffed peppers and how they are his favorite. I told him he is more than welcome to get in the kitchen and make them one night, but I have yet to see that. So I decided to appease him, put my own spin on it and try out these infamous stuffed peppers he won’t stop raving about. Italian Style Stuffed Peppers 1- 1…

Roasted Tomato & Veggie Soup

0

I am a soup person. Love all kinds – broccoli cheese, French onion, minestrone, veggie, lentil, clam chowder – you name it. They are so easy to prepare and always a home run with the family. There was a sale on some tomatoes at Publix, so I stocked up on some and decided to try a roasted tomato soup. Perfect for the rainy, dreary day here in South Florida. This was by far one of the easiest soups to not only prepare but cooking time took just about 30 minutes! Can’t beat that….   Roasted Tomato & Veggie Soup 4-5…

Easy Stir Fry Sauce Recipe

0

I was so not in the mood to cook the other day and was doing everything I could to avoid going home to start preparing. So what would any woman do – I went to Target. That place just sucks me in for hours at a time and I leave spending close to $100 every time. Damn Target. As I combed the aisles I came across this stir fry sauce that looked delish so I grabbed a bottle and figured a stir fry was the easiest and most filling thing I could think of last minute. So as I’m unloading…

Creative Meal Ideas For Toddlers

0

I have hit a freaking brick wall with meals ideas to serve my little girl. Add in her picky palate (which came out of NOWHERE!) its beginning to become a chore trying to figure out what to feed her. And I have plenty of chores, I surely don’t need to add another to the list. Now, I know I have addressed this in my post last week, but its getting to become extreme. One day she eats the entire plate full of food, then like Cybill, she switches gears the next day and my floor is covered in her dissatisfied…

Easy Lasagna Rolls

0

Being Italian, one of my favorite comfort food meals is lasagna. Preferably my mothers. All the gooey-cheesey-meaty layers slathered in homemade tomato sauce. I’m drooling just thinking about. Well, if anyone out there has tried to make one themselves, its kind of a pain in the ass. Cooking the lasagna noodles, making all the layers of meat, sausage and cheese. Its quite the ordeal. Grant it, its not too too difficult but its pretty time consuming. On Pinterest, I came across SkinnyTaste’s much easier version of my favorite meal-Lasanga Rolls. Genius! Genius! Genius!!! Instead of making all the layers, just…

Healthy Chicken Fingers

0

I’m slightly obsessed with crunchy chicken. Always trying out different recipes, methods of cooking, breading to find the ultimate crunch factor to go with the juicy chicken. This time instead of using regular breadcrumbs, I tried Corn Flakes. Mmmmm me likey. Crunchy and sweet all wrapped into one bite. It gives a fun and different texture then you are used to with chicken fingers PLUS you bake them. None of that greasy oil to clean up or add to your hips. Healthy Chicken Fingers 12 chicken tenders or 4 chicken breasts, cut into tenders 1 egg 1 teaspoon yellow mustard…
