Hot Cheesy Corn Dip

        I am always looking for new, delicious recipes for a gathering. Problem is, when I find some I usually don’t have a gathering to go to so I can’t make it. Good thing Easter came along – I dug into my arsenal of recipes and found the perfect dip to make that has been burning a hole in my apron. Better-Than-Takeout Baked Sweet Chinese Chicken

Who doesn’t love a good Chinese food take-out night? I have always loved attempting to make my own Chinese, Thai, and Oriental foods. I’ve attempted – as you can see attempted is the operative word – fried wontons, pad thai, lo mein, sesame chicken and lettuce wraps.  I succeeded maybe 2 out of 5 times. Meatless Friday – Roasted Mini Sweet Pepper Antipasto

I had a shit ton of organic little sweet peppers. They are always in the house, but I mostly use them to add some crunch and color into my salad. I wanted to spice things up a little, you know, step out of the box. I decided to roast them up in the oven with a little olive oil and sea salt.
