{Slow Cooking} Quinoa Chili

{Slow Cooking} Quinoa Chili

Take a guess as to what’s in the slow cooker… It’s Quinoa Chili! (Did the title give it away?? ) I could eat chili at least once a week. I’d put that shit on everything – hamburgers, hot dogs, chips, veggies, ice cream & salad. OK, OK, maybe not salad…. Experimenting with different ingredients on some of my fave dishes has become a fun past time for me. If my family and friends are reading this, they are most likely scratching their heads in confusion & thinking, “I thought her favorite past time was drinking??!” Yes, it still is but…

Healthy Chicken Salad Recipe

Healthy Chicken Salad Recipe

There was a time when I ate chicken salad almost every day. Sure, I may have been pregnant and it was one of the only sandwiches I could eat but that stuff was my jam. Even though I was lazy and pregnant and ordered it from deli’s or Publix most of the time, there were a few instances that I actually made my own. When I did, I tried to make this healthy chicken salad recipe as opposed to the mayo-packed crap I’d get. Needless to say, 10 months of chicken salad pretty much made me take a long…

Drunken Peaches Recipe

1

When I was a little girl, every peach season my dad would take the ones that were getting a little too ripe and soak them in wine. He would pile sliced peaches in a giant carafe then fill it with red wine. It was like a science project to me, as we waited and watch as the peaches began to turn maroon from sitting – for what seemed like an eternity – in the wine. As I got older and wiser, I realized these peaches were drunk! Typical Italians, right? Soaking some delicious fruit in even more delicious vino. It’s been…

30-Minute Chicken Sausage with Apples & Onions

30-Minute Chicken Sausage with Apples & Onions

I am all about the easy dinners so anything I can make in 30 minutes or less is a win for me. About a year ago, I was going out one night and decided to be a nice, little wifey and cook my husband dinner before I went out. I know, I know, ‘Wife of the Year’. I found chicken sausage with apples and cooked them up with some apples and onions. I was getting texts all night from him saying how great it was and he still talks about it a year later. So, after many months of…

Greek Salsa + Greek Vinaigrette Recipe

0

I tend to go through phases in my cuisine. For a while I was into creating Asian-inspired dishes and I have now moved to the Greek Isles. Love me some Greek flavors. I’m currently obsessed with the fabulous flavors that make Greek dishes pop – like fresh oregano. I have been making a cucumber, peppers, tomato and feta cheese salad that I have dubbed ‘Greek Salsa’. We put it over grilled or rotisserie chicken and it’s just awesome. The freshness of the veggies along with the yummy Greek-inspired vinaigrette kicks up boring chicken. Greek Salsa 1/2 large Cucumber…

Restaurant Remake: P.F. Chang’s Lettuce Wraps

0

Who doesn’t like P.F. Chang’s? That shit is loaded with calories for a reason, it’s so damn good! Even though the menu has gone through some changes over the years, one thing still remains delicious as ever: the Lettuce Wraps. (que heavenly angels singing in unison) Since my dining out on random nights is few and far between, I try to recreate some of my favorite meals at home. Some might end up the garbage – OK most end up in the garbage – but there is a very small percentage that I do knock out of the park…

Balsamic Glazed Baby Portobellos

0

We have finally been going out on date nights and a few weeks we hit up Trulucks for their all you can eat stone crabs. I was quite disappointed in my final total, but marveled at our friends who took down 23 legs a piece. Believe it or not, one of the most delicious things about that meal was one of the side dishes…balsamic glazed baby bellos. Drooling just thinking about them. My husband and I were talking about them for days when we both agreed we could totally make them ourselves. Challenge accepted. Better-Than-Trulucks Balsamic Glazed Baby Portobellos Mushrooms…

Kalamata Olive Aioli Dip with Herb Fries (Just like Nordstrom’s!)

Kalamata Olive Aioli Dip with Herb Fries (Just like Nordstrom’s!)

Happiest of New Years to all of you! One of my goals this year is to get back on track with my site here, because lets face it, I’ve been MIA! With good reasons though…so I can’t beat myself up too much! With Baby O almost sleeping through the night, I am less of a zombie now a days so I can actually formulate some words together! And cook again…which I have been majorly slacking in, too. Over Christmas, my 2 favorite cousins and I did some returning at Nordstrom’s and happened to stop into Bistro N for a little…

Slow Cooker Cranberry Turkey Breast + Cran-OJ Gravy

0

Now that it’s fall, it’s officially crock pot/slow cookin’ season! WHOOHOO! (Even though it’s still a million degrees here in South Florida.) I kicked it off with this absolutely amazingly awesome Cranberry Turkey Breast. I have been DYING for turkey and couldn’t hold out until Thanksgiving. So Publix was having a sale on some turkey breasts and scooped one up. It actually was a half turkey breast, and surprisingly perfect for 2 people + a half pint. I highly recommend making this easy, warm and fuzzy feelin’ kind of dish. And yes, turkey in the crock pot makes one feel…

Creamless Summer Corn Chowder

Creamless Summer Corn Chowder

I love summer soups, and corn chowder is definitely one of those! I was inspired years ago when I was working and would frequent Panera for my lunch breaks. They make a kick ass corn chowder that would only make an appearance during the summer months and I scoured the internet to find one that would taste just as good and I didn’t have to spend $5 on it every time I wanted some. Back then I was on a healthy kick, so I came across a cream-less version and it’s pretty damn awesome! Light, crispy and packed full of…
