Meatless Friday’s: Veggie Quinoa Bake

It’s no secret I’m into experimenting with quinoa. A few weeks ago I had my veggie drawer filled with some produce that was nearing the end of its days and about a 1 cup of cooked quinoa in my fridge that I forgot about on the stove and it became extra mushy. I didn’t have the heart to throw it out. I thought about making quinoa balls, or my usually quiona ‘mac & cheese’ but then I remembered the veggies and thought about utilizing those bad boys. Mediterranean Quinoa Salad

A month ago I went dining with one of my girls at a local Mediterranean restaurant. This place is great if you are in the mood for great hummus, crispy  falafel and wine – lots of it! Cheesy Quinoa

Quinoa (keen-wah) is my newest food obsession. Some might question WTF it is exactly, because that’s what I did when I first heard of this stuff. I didn’t even know how to friggin’ pronounce it (thanks Wiki). I just kept seeing delicious recipes on Pinterest with this crazy weird-named ingredient. So what exactly is quinoa you ask?
