Better-Than-Takeout Baked Sweet Chinese Chicken

Who doesn’t love a good Chinese food take-out night? I have always loved attempting to make my own Chinese, Thai, and Oriental foods. I’ve attempted – as you can see attempted is the operative word – fried wontons, pad thai, lo mein, sesame chicken and lettuce wraps.  I succeeded maybe 2 out of 5 times. So last week as part of my daily routine, I was scouring Pinterest for new recipes and came across one for Sweet & Sour baked Chicken. I was intrigued. Scarpetta

  For months, my husband and I have been dying to dine at Scarpetta in the Fontainebleau Hotel down in SoBe. We have literally been planning it for months and finally decided to go on my 30th birthday. Clearly we are huge fans of “Chopped” so of course we had to try famed Chef Scott Conant’s restaurant since it is practically in our back yard. It was the most awesomely delicious night EVER! The restaurant was extremely posh, I mean, only the best for the Fontainebleau right? We sipped on cocktails, delicious homemade bread with mascarpone whipped butter and homemade caponata….

Chicken Paranoia

Thanks to numerous spells of food poisoning, I have become extremely paranoid when eating and cooking chicken. It has become so bad that I have avoided favorite restaurant spots and cooking certain recipes because they remind me of the horribleness that I once endured. Sometimes I think my eyes do tricks on me and I see pink when I cut into a nice, juicy piece of chicken.
