My slow cooker addiction has yet to cease. Now family members know about my problem and are emailing me recipes. Enablers! Enablers!
So naturally I HAVE to make them all. First on the list were Tangy Asian Meatballs from myrecipes.com. They looked easy enough and they were Asian. I could eat Asian dishes every.single.day. My husband, not so much. But surprisingly he inhaled these balls like nobody’s business. And I think he even licked the bowl…again.
Tangy Asian Meatballs
- 1 lb ground pork
- 1/3 cup panko bread crumbs
- 3 scallions, white and light green parts only – chopped
- 1 large egg
- 1 tablespoon soy sauce
- 1 tablespoon fresh ginger, grated
- 2 cloves garlic, finely chopped
- 1/2 cup barbeque sauce
- 1/4 cup jarred plum sauce or duck sauce (I used plum, but going to try duck as well!)
- 2 tablespoons hoisin sauce
In a large bowl, combine pork, bread crumbs, egg, scallions, garlic and mix gently with hands. Then form about 1 inch balls.
Mist the slow cooker with cooking spray and place the balls in side the cooker. In a smaller bowl, combine barbeque sauce, plum or duck, and hoisin and whisk together. Pour the sauce over the meatballs and gently stir till all the balls are covered.
Cover that bad boy and let it go for 4-5 hours. I cooked mine on high for 4 hours.
If anyone has a cure for this kind of obsession, feel free to let me know. Until then, please..PLEEEEASE share any websites or recipes for other delish slow cooker meals…I’m feigning for more!
