Now that its lent, for the next 9 Fridays, no meat! I have been searching for fish and vegetarian dishes to try out and can’t wait. Who knew I’d be so excited over not being able to have meat.
Last Friday I was craving pasta. Nothing fancy, just a simple marinara sauce. MMMM! My husband gets mad at me because I refuse to keep any jarred pasta sauce in the house. It’s one of my weird house rules that MUST be followed. Its way too easy to whip up your own marinara sauce with some fresh ingredients than just popping open a jar.
Easy Marinara Sauce serves 4-6
- 2 cans Italian plum tomatoes
- 1/4 cup olive oil
- 4 cloves garlic, diced fine
- 2 bay leaves
- 3-4 fresh basil leaves
- 1/2 teaspoon of Sea Salt & Ground Pepper
- Optional: 1 large onion, diced
In a large sauce pan, heat oil and add garlic and onions (if using) on medium-high heat. Cook till onions are translucent. Crush or puree the 2 cans of tomatoes. Add to sauce pan along with 2 bay leaves, salt and pepper. Mix well and then let simmer over low heat for about an hour until the sauce starts to thicken. Remove and discard the bay leaves and add more salt and pepper to taste along with some chopped, fresh basil.
Boil water with some salt and cook pasta of your choice and then top cooked pasta with the easy marinara sauce. Garnish with more basil and dinner is served!
Its super easy to cut the recipe in half or even double it depending on how many people you are cooking for. When I made this I cut the recipe in half for me and my husband and made a little over half a box of pasta and it was a perfect amount of food. We both have 2 servings!
