Meatless Fridays – Baked Tilapia

Meatless Fridays are back! Its that time of the year again :) And we are certainly kicking it off with a bang. My husband has been dying for fish and I only can eat it when I’m in the mood for it. That could be weeks, months… So I felt bad, the poor guy works his ass off and just had one dinner request, kinda had to make it, right??

He wanted healthy, I’m giving him healthy! Baked tilapia with shallots, parsley and lemon….side of brown rice and veggies! If that ain’t healthy, I don’t know what is.

Baked Tilapia

  • 2 Tilapia Filets
  • 2 lemons, 1 sliced
  • 2 tablespoons chopped fresh parsley
  • 1/2 shallot, diced
  • 1 tablespoon butter
  • Olive oil
  • Salt & pepper

Pre-heat oven to 425 degrees. On a baking sheet, drizzle some olive oil and take the lemon you have sliced and lay them on the oiled pan. I lined up about 4 slices ( you will be laying the filets on top of the slices). Sprinkle some more olive oil on the lemons.

Next, take some of the diced shallots and put them on the slices of lemon. Generously salt the two pieces of tilapia then add some pepper to both sides as well.  Place the filets on each row of lemon slices & shallots. Top the filets with the remaining shallots, and chopped parsley. With the second lemon, cut in half and squeeze some fresh lemon juice on top of the filets. Cut the tablespoon of butter into 2 pieces and place on top of each filet. Drizzle a little more olive oil and stick them in the oven.

Bake for 15 minutes. Serve immediately and with some extra slices of lemon. Simple, easy and quick!
