Last night, both my husband and I were beyond exhausted. Ordering out food was not an option, as we have been spending way too much $$ on takeout/dining out in the past couple weeks. So we put our semi-functioning brains together and created a yummy, hearty dish in under 30 minutes. It was our take on chicken cacciatore, minus the olives and other goodies that are usually in a traditional one. We used what ever we had in our fridge and pantry – usually these again are hits or misses and the last thing both of us needed last night was a complete fail.
We threw the ingredients into a braising pan and let it go until we were ready to sit down and eat. The longer it cooked in its yummy juices, the better it tasted!
Quick Chicken ‘Cacciatore’
- 2 Chicken Breasts, chopped in small-ish pieces
- 1 can Hunts Diced Tomatoes with Oregano, Garlic & Basil
- 1 small Yellow Onion, roughly chopped
- 1 Garlic clove, roughly chopped
- 1-2 tablespoons Olive Oil
- Salt & Pepper
In a large pan or braising pan, heat olive oil over medium to medium-high heat. Season the chicken pieces generously with salt and pepper. When the oil is nice and hot, add chicken and garlic. Cook for a few minutes, then add onions and tomatoes. Stir together, lower heat to low, and let cook for a good 20 minutes, covered.
Check every few minutes to make sure nothing is sticking/burning.
Serve with a salad and some rice and you have yourself a deliciously warm, home cooked meal that is a no brainer!
