Meatless Friday’s: Nutella Banana Bread

I thought I would switch it up a bit for this Friday’s meatless dish and go a bit on the savory side! How can you go wrong with Nutella or bananas or both?! Nothing beats it and this bread will absolutely blow your socks off.

I was lucky enough to stumble upon this recipe on Pinterest (of course) and knew I had to try it out. Surprisingly, it was so easy! Only hard part was waiting for the banana’s to brown – it was wearing on my patience because I was feigning this banana bread and drooling over the picture. I have problems. It’s a perfect dessert for the upcoming holidays or just to have in the house with some coffee or tea :)

The recipe calls for 4 small loaf tins, I only had a large loaf tin and it worked out fine. Just needed to be cooked a bit longer than what the recipe states. If you have smaller tins, definitely use those!

Nutella Banana Bread

from Pass The Sushi

  • 2 cups Flour
  • 1/2 cup Shredded Coconut
  • 3/4 cup Sugar
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 3 ripe (brown) Bananas, mashed
  • 1/4 cup Plain Yogurt
  • 2 Eggs, lightly beaten
  • 6 tablespoons Unsalted Butter, melted and cooled
  • 1 teaspoon Vanilla
  • 1/2 cup Nutella

Preheat your oven to 350 degrees.

Butter your loaf pan(s) then line with parchment paper, butter again and dust with flour. I didn’t have parchment in the house and it turned out fine. Just make sure you butter it well and lightly dust with flour. Knock out any additional flour.

In a large bowl combine flour, coconut, sugar, baking soda, and salt. Mix and set aside.

In a medium sized bowl, combine mashed bananas, yogurt, eggs, butter and vanilla. Mix and gently add your wet ingredients to the dry ingredients. Stir for about 10 minutes until everything is incorporated. The batter will be thick and lumpy.

In a microwave safe bowl, heat up the Nutella for about 15 seconds then give it a nice stir and pop it back in the microwave for another 15 seconds to get it to a nice, smooth consistency.

Pour half the batter in the buttered pan. If you are using 4 smaller loaf pans, divide half the batter evenly over the four. Spoon about 1/2 the melted Nutella over the batter and with a butter knife, swirl and twirl the Nutella around the batter. By doing that, will give the bread a swirly look that will totally impress! Pour the remaining batter in and repeat the Nutella step again.

Bake for 25-30 minutes. If you are using one loaf pan, I baked it for an extra 5-10 minutes. Stick a toothpick to make sure it comes out clean and ignore the gooey chocolate if it comes out on it! Let cool for about 20 minutes then slice and serve!
