Now that I can eat meat on Friday’s again, I have been dying for a turkey club. Unfortunately, being pregnant limits me to some food I used to eat on the reg like sushi and turkey meat. So if I want a turkey sandwich, its got to be fresh, off the bird kind of turkey meat. Bleh. So instead of roasting up a whole bird for this sandwich, I hit up good old Publix and found some turkey cutlets. My wheels started spinning and knew I could pull of the sandwich of my dreams with them. And you can bet your sweet ass that’s exactly what I did!
Turkey Cutlet Club Sandwich w/ Avocado Spread
Serving Size yields 2 sandwiches
- 2-4 Turkey Cutlets
- 8 slices of Bacon
- 6 slices of Bread, Toasted
- 1 Avocado
- 1/2 Lime, juiced
- 1 teaspoon Cilantro
- Salt
- Pepper
- Garlic Powder
- Onion Powder
- Lettuce
- Tomato
- Mayo
In a pan over medium high heat, cook bacon. Set aside on a paper towel to soak up the grease.
Discard all but 2 tablespoons of the bacon grease. Season the turkey cutlets generously with salt, pepper, onion and garlic powder. Over medium/medium-high heat add the turkey cutlets to the bacon grease and cook 3-4 minutes on each side. Remove from pan and place on a paper towel to soak up the grease.
For the avocado spread, mash the avocado to get a semi-smooth consistency. Add salt, pepper, cilantro and lime juice. Mash and mix some more and adjust seasonings to taste.
Toast the 6 slices of bread. When they are done you can begin to construct the sandwich.
Spread some mayo on the first slice, then lettuce, then 3-4 slices of bacon, then tomato. Take the middle slice and spread the avocado mixture on it, place 1-2 turkey cutlets on next, top with lettuce, tomato, remaining bacon. On the top slice you can add more mayo if you like.
Cut and serve!
This really hit the spot and made for a nice change up in our weekly dinner lineup. Serve with a great salad or sea-salt fries….or in our case both!
