I have had the worst cravings for peach cobbler this past week. The funny thing is I’ve never even had peach cobbler before in my life! Sure, I could have easily gone to Publix and buy it frozen, but its not just not the same as homemade. I wanted authentic, southern-style peach cobbler because it looks so damn delicious on T.V. or in pics. I of course went to good old trusty-reliable Pinterest and hit the jackpot! I found probably the easiest and most delicious homemade recipe for peach cobbler.
Since I have nothing to reference it by, this is clearly the best cobbler I’ve ever tasted I highly recommend trying this because not only will it blow your mind, it will blow the minds of everyone who tastes it. So make it this weekend, for a party, BBQ or just for yourself. DO IT!
Peach Cobbler

- 8-10 medium sized Peaches
- 3 cups Flour
- 1 1/2 cups + 1 teaspoon Sugar
- 2 tablespoon Cornstarch
- 1 tablespoon Baking Powder
- 1 teaspoon Salt
- 1 cup/2 sticks Unsalted Butter, cold, cut in 1/2 inch cubes
- 1 cup + 2 tablespoons Buttermilk
Preheat oven to 425 degrees. Butter a 13 x 9 glass or ceramic baking dish.
Peel and cut peaches into wedges. If you want to add other fruit to it like blackberries, strawberries or even blueberries, you can throw those in as well! In a medium size bowl, whisk 1 1/2 cups of sugar and cornstarch together. Add fruit and mix well. Place the fruit in the baking dish and in the oven for about 10-15 minutes.
While that is baking, in a large bowl add flour, baking soda and salt – whisk all the ingredients together. Add the cubes of cold butter and either us a pastry blender or your hands/fingertips to mix. Work the butter and flour mixture together until it looks like coarse meal. It will take a good 5-10 minutes, depending how strong you are!
Add in buttermilk to the mixture and stir to combine till it forms a dough. By this time the fruit should be done baking and take a spoon and drop a mound of the mixture on to the fruit – make about 12 mounds. (I used a smaller baking dish and only came out with 9 mounds, you can adjust accordingly) Sprinkle the dough mounds with the remaining tablespoon of sugar.
Place back in the oven for 25-30 minutes. Serve nice and warm, with some ice cream!
