Southwestern Chicken Quesadillas

I love me some quesadillas!

Haven’t had them in ages and typically when I cook Mexican, I just stick to tacos. While trying to decide what to cook up with my NatureRaised Farms gluten free grilled chicken breast fillets, they were the first thing that popped into my head. Definitely makes for a yummy, quick and easy dinner because that is the last thing I wanted to do was spend hours in my kitchen…9 months preggo-ready to pop cooking!

Enter the easiest meal you’ll ever make: Southwestern Chicken Quesadillas! All you need are some fresh veggies, black beans, cheese and NatureRaised Farms chicken and you’ve got yourself a delicious, hot meal in less than 30 minutes!

Southwestern Chicken Quesadillas

  • 4 Flour Tortillas
  • 2 NatureRaised Farms Gluten Free Grilled Chicken Breasts ( or 2 cooked chicken breasts), diced
  • 1/2 cup Low Fat Shredded Cheddar Cheese
  • 1/2 Red Onion, sliced thin
  • 3-4 Mini Peppers, julienne
  • 1 can Black Beans
  • 1 tablespoon Apple Cider Vinegar
  • 2 Bay Leaves
  • Hot Sauce
  • Olive Oil
  • Cooking Spray
  • Cilantro
  • Optional: salsa, sour cream, guacamole

In a small frying pan, heat about a tablespoon of olive oil over medium high heat. Add red onions with a couple dashes of hot sauce and sautee till they are soft. Season with some salt and pepper. Reserve in a dish.

In that same frying pan, add about another tablespoon of olive oil over medium high heat and add peppers. Sautee and season with salt and pepper. Cook for about 3 minutes. Reserve in a dish.

In a small sauce pan, heat black beans with the apple cider vinegar, bay leaves, salt and pepper. Cook till they are fragrant and warm.

Quesadilla Time:

In a large enough pan to fit the tortillas, spray cooking spray and heat over medium heat.

1. Add tortilla and begin to assemble the ingredients atop-first the cheese, then chicken, onions, peppers and beans. Add a bit more cheese on top of that.

2. Place another tortilla on top of that. When it looks like the cheese is starting to melt and the outside of the tortilla starts to get golden brown, it’s time to flip. Easiest way to do it is take a plate and put it face down on the tortilla, then flip the pan over leaving the quesadilla on the plate. Then slide that bad boy back in to the pan to cook the other side. Super easy.

3. Once the other side of the tortilla is gold brown, remove from heat, cut and serve!

Repeat steps 1-3! :)

Serve with low fat sour cream, salsa, some guac – whatever your heart desires! Garnish with some cilantro and you have yourself some genuine delicious quesadillas that will fill you up!
