I tend to go through phases in my cuisine. For a while I was into creating Asian-inspired dishes and I have now moved to the Greek Isles. Love me some Greek flavors. I’m currently obsessed with the fabulous flavors that make Greek dishes pop – like fresh oregano. I have been making a cucumber, peppers, tomato and feta cheese salad that I have dubbed ‘Greek Salsa’. We put it over grilled or rotisserie chicken and it’s just awesome. The freshness of the veggies along with the yummy Greek-inspired vinaigrette kicks up boring chicken.
Greek Salsa
- 1/2 large Cucumber
- 10 Mini Sweet Peppers, chopped
- 5-8 Grape Tomatoes, cut in half
- 1/2 cup Feta Cheese crumbles
Greek Vinaigrette
- 3 TBS Olive Oil
- 1 1/2 TBS Red Wine Vinegar
- 1/2 TBS Fresh Oregano, chopped
- Salt
- Pepper
Put all the vinaigrette ingredients in a bowl and add some salt and pepper. Whisk together and let it sit for about a half hour.
Clean and cut all the veggies. Toss in the feta and then pour the vinaigrette over. Mix well and serve!
You can eat it plain, on some lettuce or with chicken. We love it with chicken and couscous. If I’m feeling a little spunky, I’ll buy some spanikopita and bake some of that.
