My husband got the wild idea of having a Super Bowl party…..the day before the Super Bowl. Wasn’t that sweet of him? So of course the party planning was on my shoulders while he confirmed guests. I wanted to do some bites that wouldn’t be too much effort and still be delicious. I decided to whip up some appetizers that we could just pop in our mouth while watching the game. I have always been wanting to make some kind of toothpick skewered appetizer and vowed the next time we had guests, I’d do it. I had some Jennie-O Deli Turkey and I thought, why not Turkey Skewers! You just stack the ingredients on a tooth pick and you are done. OK-so it may not be as simple as that, but if you have a sous chef or some ample time, knock out all the prep work earlier in the afternoon, set up an assembly line and you will get these bad boys skewered in no time.
I thought of playing off a turkey club sandwich and stacked halved cherry tomatoes, a piece of lettuce and a cube of cheese and the Jennie-O deli turkey. I also love the combination of cheddar, apple and turkey – and so do my girls. So for the kiddies, I did theirs a bit different and skewered a piece of apple, cheese and turkey. These were totally kid-approved and they were gone with in minutes. Even the adults jumped in on those. Pair it with a great dipping sauce and you got your self a healthy app that is both kid and parent-approved.
Jennie-O Turkey Skewers
- Jennie-O Sun-dried Tomato Deli Turkey (do not buy sliced, have the deli slice you a chunk)
- Cheese (Colby, Cheddar – cubed)
- Romaine Lettuce, cleaned and cut in pieces
- Cherry Tomatoes, halved
- 1 Apple (red, fuji, green-your preference!) cut in pieces
- Toothpicks
Dijon Mayo Dipping Sauce
- 1/2 cup Mayo
- 1 TBS Dijon Mustard
- 1 TBS Honey
Cube the Jennie-O deli turkey, cheese and apple. Clean lettuce and cherry tomatoes. Cut the tomatoes in half and cut the lettuce in pieces.
Take a toothpick and stack tomato, lettuce, cheese then finish with the turkey cube. Continue till all is done.
For Dipping Sauce: In a dipping bowl or ramekin, combine mustard and honey. Once mixed, add the mayo, stir and you are ready to serve!
Repeat the same steps with the apple, cheese and deli turkey cubes for the kids version.
Serve immediately or make about an hour ahead of serving.
Easy right? Jennie-O deli turkey saved the day for me other wise I would probably still be cooking for that damn party!
