I have taken the next steps in making the family a bit more healthier and started a whole new lifestyle change…aka 21 Day Fix. It’s brutal, I’m starving but it’s all for the better of my family and myself. So I am embracing it every container at a time. It ain’t easy and come nighttime, I turn into a particular ‘Gap Girl’.
It’s all for a better me, right? OK, with that being said, my brain has been scrambling to make some fresher, filling meals that I could use going forward. That’s where these sautéed greens with cannellini beans come into play. They were so.freakin.delicous. Best part, they fit the meal plan perfectly and took literally 15 minutes to make. I am all about the quickness, especially when I am HANGRY! You could use pretty much any one of your favorite greens like kale, spinach, or swiss chard. This week I used chard and it was spectacular!
Sautéed Greens with Cannellini Beans
- 1 bag Greens – Swiss Chard, Spinach, Kale
- 1/2 Lemon – juiced (about 2 tablespoons)
- 1 can Cannellini Beans (white beans)
- 1/2 cup Cherry Tomatoes, quartered
- 1 TBS Extra Virgin Olive Oil
- 1-2 TBS Water
- All Purpose Seasoning (Onion & Garlic Powder, Thyme, Mustard, Salt)
- Himalayan Salt
In a large pan, heat oil and water over medium high heat. Add greens and sauté for a few minutes or until it starts to cook down. Toss in a pinch of all purpose seasoning with the cherry tomatoes and continue to cook.
Add lemon juice and a couple turns of himalayan salt. Mix everything around then add the beans. Cover and cook for a few more minutes. Serve immediately!
The lemon really adds a nice tang to greens and pushes the flavor to the next level. This makes a great side dish to fish or a lean cut of steak. If you are going the vegetarian route, you are all set! A big bowl of these sauteed greens with cannellini beans will hit the spot.
