If you like crunchy, crispy, chopped salad then you will absolutely love this Brussel Sprout Salad. I didn’t feel like screwing up the gorgeous bag of brussel sprouts I bought a few weeks ago (I tend to burn the crap out of them!) and I thought about a salad I had a brunch when visiting my girlfriends in Atlanta. It was so incredibly delicious and tasted like coleslaw – minus the fatty fat mayo-based dressing!
I chopped up that bag, tossed in some fresh veggies, a killer dressing and have not stopped eating it since. We have literally had it with every meal, until the brussel sprouts were gone! I used the Asian Dressing from the 21 Day Fix since I made this while I was doing the program and it seriously was the best combination EVER. You can add your favorite dressing, but I highly recommend you using this one!
Brussel Sprout Salad
- 1 bag Brussel Sprouts, chopped like slaw
- 6-7 Mini Sweet Peppers, julienned
- 1/2 Cucumber, diced
- 1/4 cup Cilantro, chopped
- 1/3 cup Asian Dressing from 21 Day Fix
- 1/3 cup Honey Roasted Peanuts or Almonds, roughly chopped
21 Day Fix Asian Dressing
- 1/4 cup Orange Juice
- 1-2 TBS Freshly Grated Ginger
- 2 TBS Soy Sauce (reduced sodium)
- 2 tsp Honey
- 1/4 cup Rice Wine Vinegar
- 1/4 cup Sesame Oil
Whisk together orange juice, ginger, soy, honey and vinegar. Slowly add sesame oil and continue to whisk till everything is incorporated.
Directions:
Chop the brussel sprouts about 1/2 inch thick and separate the pieces. It will look like cole slaw. If you have a salad spinner, clean the brussel sprouts, other wise soak in cold water and drain in colander. Reserve in a large salad or mixing bowl.
Dice cucumber, chop cilantro and julienne those peppers then add all to the brussel sprouts. Now it’s time for the dressing – this is what ties everything together. Toss in the dressing and top with peanuts. Serve immediately!
It is best served cold and the longer the dressing sits on the goods, the better it will taste!
