I wrote Monday how I was MIA from a nasty stomach virus and thought the damn thing had finally left my family after unleashing its massive destruction on everyone, sparing my husband and daughter. Fajita Night!

I am all about the easy, 30 minutes or less recipes for dinner. So when I was flippin’ through the recipe book my mom made me for Christmas, I stopped on a recipe for fajitas. Had minimal ingredients and took less than 30 minutes-score. Doing tex-mex at home is by far the best, its so fun to make all the fixings yourself. Damn You, Daniel Tiger’s Neighborhood

My daughter’s newest obsession is Daniel Tiger’s Neighborhood on PBS. It’s a play off “Mr. Roger’s Neighborhood”, with some of the same characters in his Neighborhood of Make-Believe. The show follows Daniel Tiger and his family and friends as they face good times and bad times and learn some pretty valuable lessons that are great for pre-school aged kids see.
