We are a chicken family. I’m telling you, we eat so much we may start clucking soon and I’m totally okay with that. My husband and I share a love for cooking and eating, so it’s not rare for him to jump into the kitchen on any given night to try out a recipe he found. Not long ago, he did just this and thinking about it is making my mouth water. He reluctantly told me he was watching Ina Garten’s Barefoot Contessa and saw her make a delicious roasted rustic chicken with croutons. The way he was raving about…
Leftover Chicken? Make Some Chicken Parcels
0I haven’t been inspired too much lately in the kitchen. Hate to admit it, but there have been a lot of soup & salad nights…and sometimes sans soup. Call it laziness, call it I’m pregnant AND lazy. The other night I splurged and went to good old Publix and grabbed a yummy rotisserie chicken. So what to do with all the left overs?? Chicken Pot Pie is always a nice fall back, but tonight I decided to step outside the box and make Parcels. What the hell is a parcel you may ask? A fancy word for a package. Cause…
Caprese Bruschetta Chicken
0Looking for an easy, healthy and fresh meal to change up your dinner routine? You must try this! In our house we love everything Italian and for some reason I have been in the mood for caprese salad (fresh mozzarella, basil and tomatoes). Back when I was in college I worked at a place called Ciccio & Tony’s (the best place ever – wish it wasn’t only in Tampa!!) where they added “Chop-chop’s” to the menu. They are pretty much like what Chicken Kitchen or Offerdahl’s offer, but a million times better. So I started making my own versions of these chop-chops with any leftovers I have. All you need is some rice (I prefer yellow but white, brown, jasmine work), salad, some type of dressing and…
