I am the worst at gauging how much spaghetti to make. I either make way too much or just enough for one bowl. No matter how much I try, I never seem to make the perfect amount. Clearly pasta is one of my favorite meals and I tend to cook it as much as I can! I am a crazy Italian, what can I say… I don’t skimp on it either. Quick Chicken ‘Cacciatore’

Last night, both my husband and I were beyond exhausted. Ordering out food was not an option, as we have been spending way too much $$ on takeout/dining out in the past couple weeks. So we put our semi-functioning brains together and created a yummy, hearty dish in under 30 minutes. Easy Lasagna Rolls

Being Italian, one of my favorite comfort food meals is lasagna. Preferably my mothers. All the gooey-cheesey-meaty layers slathered in homemade tomato sauce. I’m drooling just thinking about. Meatless Fridays – Pasta

Now that its lent, for the next 9 Fridays, no meat! I have been searching for fish and vegetarian dishes to try out and can’t wait. Who knew I’d be so excited over not being able to have meat.
