Buffalo Chicken Bites

Buffalo Chicken Bites

There are a million and one different recipes you can create with a leftover rotisserie chicken. It’s not only easy to just roast your own but you can also drive to the store for one when you don’t feel like cooking. Bonus to one of these rosters, you can stretch it for 2-3 meals. This week while my husband is out of town on business, I decided to test out a new creation I saw on Pinterest: Buffalo Chicken Bites. I like to experiment when he’s not around, you know, in case of a complete Pinterest fail. (I know you all have…

Leftover Lamb Gyros

0

For Easter, in our house it is customary to serve lamb. For years, my mother has been making the leg of lamb in the oven with Seagrams and garlic. Well, for at least 3 years, she has managed to blow the oven door completely off from the massive explosion from the alcohol. It was quite a sight. So 3 oven doors and a new kitchen later, the parents have decided to try a new way of cooking the lamb, grill it baby! It is sooooooo freaking good! We had tons of left overs and as I was stuffing my face…

Meatless Friday – Baked Fish Sticks

0

Here we are, another week with out sweets and another friday without meat! I swear, my sweet tooth is going through some major withdrawls. Mostly at night. BLEH!! It is taking everything out of me not to dive into the giant banana-chocolate cake from my husband birthday this past Monday. Must.push.through!!!!!! So a few months ago, I was craving fish sticks. I have no idea why seeing as I never ate them as a child or even liked them much. You would think I was pregnant or something …. and for the record I am not!!! TRUST ME! I found…

Leftover Chicken Chop-Chop

0

I always try to mix things up when I have leftover roasted chicken in the fridge. Back when I was in college I worked at a place called Ciccio & Tony’s (the best place ever – wish it wasn’t only in Tampa!!) where they added “Chop-chop’s” to the menu. They are pretty much like what Chicken Kitchen or Offerdahl’s offer, but a million times better. So I started making my own versions of these chop-chops with any leftovers I have. All you need is some rice (I prefer yellow but white, brown, jasmine work), salad, some type of dressing and…

Steakhouse Quality Soup & Salad

0

Not to toot my own or horn or anything but my Valentine’s meal to my husband was probably one of the best meals I have ever made. Normally when I cook a big meal, I tend to not eat as much. I guess it’s some kind of psychological thing since I usually slave all day cooking it, who knows. But I went to town on that shit. Seconds and thirds type shit! Again, not tooting my own horn, but beep-motha-effin-beep!! It really was like going to a steakhouse. Well, minus the $300 bill. Not sure why I haven’t attempted this…

Steakhouse Creamed Spinach

Steakhouse Creamed Spinach

I love side dishes. Sometimes I could just eat an entire meal of side dishes. When it’s the holidays, side dishes are pretty much all I eat. They are my favorite. I love making them, I love eating them and most of all I looooove having them as leftovers. The other night I tried out new side dish and it was off the hook. I was trying to be all romantical and make my husband a homemade steakhouse-type dinner: clam chowder, wedge salad, surf & turf and creamed spinach. I know, I’m fancy. Now, I never really enjoyed creamed spinach,…

Thirsty Thursday – New Years Edition

0

Although still extremely hung over from New Years, I had to find ways to get rid of the 4 Asti bottles I have left over in my fridge. I came across the ‘Old Capri Long Drink’ on yummly.com. It must be my Italian blood that was drawn to this but anything that has Asti Spumante AND Limoncello as its main ingredients is a winner in my book. Old Capri Long Drink 2 oz Limoncello Asti Spumante Fill a tall glass with ice. Pour Limoncello over ice then fill the rest of the glass with the Asti Spumante. Garnish with a…

Soft Serve for Baby

0

I have a problem when it comes to bananas. I buy a bunch with all intentions of eating them asap. But that never seems to happen. I start off with great banana momentum but then I’m left with 2-3 spotty ones. I went through a super healthy eating phase back in my running days and remembered a soft serve concoction I saw on a blog once. Its the easiest and most delicious way to get rid of your nasty brown bananas. Since I make all the baby’s food myself, and most of my friends and family are still scratching their…

Leftover Madness

0

On Friday I attempted a new recipe for pan seared chicken with a lemon, butter and wine sauce and had a huge epic dinner fail. The sauce smelt delicious but tasted like burnt crap. We barely finished, luckily I made a shit load of thin spaghetti as a side. Any who, I had a decent amount left over. Yesterday we (mostly me) were hung-ovahhh from going to the Casino for a friends birthday. Patron es no bueno. No.Bueno. We pigged out on greasy burgers for a late lunch, so for dinner I wanted something a little bit lighter. My nanny…
