Healthy Chicken Fingers

I’m slightly obsessed with crunchy chicken. Always trying out different recipes, methods of cooking, breading to find the ultimate crunch factor to go with the juicy chicken. This time instead of using regular breadcrumbs, I tried Corn Flakes. Mmmmm me likey.

Crunchy and sweet all wrapped into one bite. It gives a fun and different texture then you are used to with chicken fingers PLUS you bake them. None of that greasy oil to clean up or add to your hips.

Healthy Chicken Fingers

  • 12 chicken tenders or 4 chicken breasts, cut into tenders
  • 1 egg
  • 1 teaspoon yellow mustard
  • 2 tablespoons honey
  • dash (or 2) of hot sauce
  • Corn Flake crumbs

Preheat the oven to 450 degrees. Take 2 shallow dishes and place the Corn Flakes in one and the egg, mustard, honey and hot sauce in the other. Mix the wet ingredients. (For the Corn Flakes, I just smashed a few handfuls in a Ziploc bag. You can even get your kids involved to help with that part.)

Dredge the chicken in the egg mixture then coat with the Corn Flake crumbs. Place coated chicken on an ungreased baking sheet and bake for 20 minutes or until the chicken is cooked through.

Pair with some yummy dipping sauces like honey-mustard (just mix mustard and honey in a dish!) or sweet and spicy sauce (duck sauce and hot sauce mixed).

  1. I started doing this years ago when I found a similar recipe in a healthy cookbook – I think they are great. If you make lots and have leftovers, put them over a bed of romaine lettuce with some salad fixings and a reduced fat honey mustard dressing….fantastic!
