Slow Cooker Quinoa Chili

It’s Quinoa Chili! (Did the title give it away?? :) )

I could eat chili at least once a week. I’d put that shit on everything – hamburgers, hot dogs, chips, veggies, ice cream & salad. OK, OK, maybe not salad…. Experimenting with different ingredients on some of my fave dishes has become a fun past time for me. If my family and friends are reading this, they are most likely scratching their heads in confusion & thinking, “I thought her favorite past time was drinking??!” Yes, it still is but cooking is a very close second! I have been trying to switch up recipes I have to add a little spice in our lives. Quinoa is a staple in our house so I thought why not try Quinoa Chili….but in the slow cooker! Livin’ on the edge, I know.

Slow Cooker Quinoa Chili

  • 1 cup Uncooked Quinoa, cleaned
  • 1 can Corn, drained
  • 1 can Red Kidney Beans, drained & rinsed
  • 1 can Black Beans, drained & rinsed
  • 1 can Fire Roasted Diced Tomatoes
  • 1 can Rotel Tomatoes & Green Chiles
  • 2 cups Chicken Broth
  • 1/4 cup Hot Sauce (optional)
  • Toppings: Avocado, Cheese, Cilantro, Greek Yogurt/Sour Cream, Onion

Homemade Taco Seasoning

  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 3/4 tsp Himalyan Pink Salt
  • 1/4 tsp Cayenne Pepper

Rinse your Quinoa good. I like to put it in a hand strainer and let it run under the faucet to get clean. Place in slow cooker.

Combine corn, beans, tomatoes, chicken broth, hot sauce and taco seasoning (got this recipe from my friend, Amanda-check her out!). Give it a good mix-y mix then cover.

Cook on low for 6 hours or high for 4 hours.

Slow Cooker Quinoa Chili ~ The Anti Mom Blog

Divvy it up and top as you please! We love chopped avocado, cheddar cheese, cilantro and a dollop of Greek yogurt! If you haven’t tried Greek yogurt as a sour cream substitute yet-DO IT! Not only does it taste great, but it is better for you. You could also add 1-2 breasts of chicken to the Quinoa Chili to bulk up the protein. Simply clean chicken, add with all the other ingredients then remove after the 4 or 6 hours, shred and add it back in to soak up all the yumminess.
