Easy Shrimp Scampi

While visiting my very pregnant sister, I felt bad letting her do any work what so ever. I tried to do everything I could to give her a break while I was there. I remember being pregnant and how much I hated every second of it…the swollen feet, not being able to shave my legs or even seeing my feet for that matter and the utter exhaustion that never seemed to leave. There were more, but I’ll spare you guys a pity party. Well, to get where she is just add twins + a 15 month old toddler to the mix – that trumps any crap I felt for sure!

So when she told me she wanted to cook shrimp scampi for dinner, I thought she was crazy and tried getting her to go lay on the couch so I could take over. She was very adamant about cooking and how this was an extremely easy recipe and will only take her about 30 minutes. After a few minutes of arguing, I gave in to preggers and she got to cooking. With in 40 minutes, dinner was made and on the table. I don’t know if I thought that went by way too quickly because I was chasing around 2 toddlers but it was so fast…and way too easy – even a pregnant lady with twins and a toddler could handle it! And if she can waddle around the kitchen and do this – we can too, dammit!

Easy Shrimp Scampi

serves 2

  • 16-18 Frozen Shrimp, thawed
  • Olive Oil
  • Parsley, chopped
  • 1-2 pieces of garlic,chopped
  • 4 TBS butter, cut into cubes
  • 1/2 white wine
  • 1 lemon, half juiced, half sliced for serving
  • Salt & Pepper to taste

Preheat oven to 375 degrees.

Thaw shrimp in a colander under cold water. Clean, devein shrimp and set aside.

In a baking dish, place thawed shrimp, butter pieces, garlic, chopped parsley and white wine. Drizzle olive oil over the shrimp. Cook for 15 minutes or until shrimp has become pink.

 Squeeze half the lemon over the dish when it comes out of the oven and season with salt and pepper to taste. I like to cut up some extra slices of lemon in case you need some more citrus!

Easy right? Serve with yellow, white or brown rice. If you’re feelin’ crazy, steam up some broccoli too! Or if you are feeling REALLY loco, pair it with one of these bad boys.  Yum.
