Healthy Boneless Buffalo Chicken Wings

So it’s football season, as many of you know and if you or someone you know is a football fanatic, your Thursday’s, Friday’s, Saturday’s, Sunday’s & Monday’s are pretty much set for the next 3 months. Living with a NY Jets fanatic and an all around football fan, we like to make it a party on Sunday & Monday’s. We went all out first week, with wings, dips, chips, slow cooker goodies and tons of  booze. Well, months of eating like that can really make you feel like a fatass so, enter my new mission – Healthy Football Sundays! There will still be food and plenty of booze, but our bites will be on the more healthier side to avoid unwanted pounds.

I got to thinking and came up with these Boneless Buffalo Chicken Wings that are delicious and you won’t feel like a heifer after eating them. They make an awesome appetizer, but can be a delish dinner with some sweet potato fries and a salad. If you are a dipper, like me, I made some healthy homemade ranch dipping sauce to dunk these bad boys in!

Healthy Boneless Buffalo Chicken Wings

  • 3-4 Chicken Breasts, cut into 1 1/2 inch chunks
  • 1 cup Whole Wheat Flour
  • 1 Egg
  • 2 TBS Paprika
  • 1 TBS Garlic Salt
  • 1 cup Franks Red Hot Sauce
  • 2 TBS Butter
  • 1/2 TBS Garlic Powder
  • Coconut Oil Spray
  • Gallon size Plastic Bag

Preheat oven to 400 degrees.

Take the gallon Ziploc bag and combine flour, paprika, and garlic salt. Mix it up well.

In a shallow dish, lightly beat an egg.

Spray baking sheet(s) with coconut oil spray.

First, dip chicken breast chunks in the lightly beaten egg. Then transfer to the Ziploc bag of the flour mixture and give it a good shake. Making sure to cover every piece. Remove nuggets from bag, shaking off excess flour. Place on baking sheet(s), spray the top of the nuggets with the coconut oil spray and cook for 30 minutes, flipping once at 15 minutes.

In a small saucepan, heat hot sauce, butter and garlic powder on medium heat. Once the sauce has become warm, remove from heat. When chicken is done cooking, place them in a bowl or dish and pour hot sauce over, coating every nugget.

Serve immediately with a side of blue cheese or this awesomely healthy and delicious Greek Yogurt Ranch Dipping sauce!

So go ahead and indulge a little on Football Sunday’s (& Thursday, Friday, Saturday and Monday, too!) with out feeling the slightest bit sad. Well, you might feel a little sad if you are a Jets fan (sorry, honey)
